Make sure Ribbon interface is enabled in Advanced settings. Without Ribbon = this only gray interface.

To the DefineVideo problem - I guess this feature needs flash player ActiveX component installed on Windows.
How do i install ActiveX?
Currently, Adobe does not have it for download and current version is blocked from running. You can use ActiveX when you install older version. I can't help you with it.
